Weight Loss Dinner Recipe 

 

White bean salad with celery

 

 

You need the following ingredients for the tasty dinner recipe

 

100g cannellini beans, canned
10g pitted black olives
80 ml vegetable stock
1 celery stick
100g tomatoes, skinned and cut into wedges
½ lemon juice
1tsp olive oil
½ tsp fresh rosemary
1 tsp fresh parsley
Pinch of turmeric
Crusty wholemeal roll

Step to begin:


Heat the oil on a medium heat and add celery and chopped rosemary. Cover and cook gently for 8 minutes. Stir in vegetable stock and turmeric and bring to boil. Cook for another 6-8 minutes, then stir in tomatoes, lemon juice and beans. Simmer for 5 minutes and add olives. Season with sea salt and black pepper. Serve with parsley and crusty roll.
